🎃 Paleo Pumpkin Energy Bars 🎃

So I eat a lot in the morning, like A LOT, a lot! 🍳🥓🍌🥬🐮 In addition to Eggs with Bacon or Sausage AND a Collagen Peptide Fruit Smoothie, I also chow down on 1-2 of these Paleo Pumpkin Energy Bars! They’re Whole30 Friendly, great on the go, and are completely guilt free, coming in at only 137 Calories per bar! These have become a staple in my diet and have been consistently in the fridge at all times for the past 3 weeks! They make a great beach snack, and if you top them with almond butter they make a great dessert as well!

INGREDIENTS

  • 1 cup Almonds

  • 1 cup Coconut Chips

  • 1/3 cup Dried Apple Chips 

  • 1/4 cup Pumpkin Purée 

  • 1 1/2 cups Pitted Medjool Dates

  • 2 Scoops of Orgain Collagen Peptides

  • 1 1/2 tsp Pumpkin Pie Spice

INSTRUCTIONS:

  1. Add apple, coconut, and almond to your food processor and blend until everything is very finely chopped, about 1-2 minutes.

  2. Add in your collagen peptides, pumpkin pie spice, pumpkin purée, and dates and blend until mixture turns into a “dough”. I recommend tearing the dates up first by hand or with scissors before adding to the food processor. 

  3. Line a 9x9 baking pan with parchment paper and spread the mixture into the dish, flattening it down by hand. You can roll a shot glass along the top to smooth it out even further.

  4. Place your baking dish into the refrigerator for 4 hours to allow mixture to harden into bars.

  5. Cut into 16 pieces with a metal spatula. Serve with some fresh fruit, a glass of almond milk, and enjoy!
