🍕🍌 Paleo Plantain Pizza "Bagels" (Vegan & Gluten Free) 🍌🍕

 
 

Pizza Bagels may seem tasty, but they’re loaded with things like Gluten, Dairy, Soy, & even Added Sugar🤢These Paleo Plantain Pizza “Bagels” are free from all of those ingredients, yet still taste just as good, if not better! Plus, there’s only 3 main components and everything can be found at your local grocery store! Pair with a side of The New Primal’s Ranch Dressing and cure your munchies while staying healthy!

INGREDIENTS

  • 1 Green Plantain, sliced into 1”-1.5” slices

  • 2 Tbsp Coconut Oil

  • 1/4 Cup Paleo Compliant Pizza Sauce (no sugar added)

  • 1/4 Cup Miyokos Vegan Mozzarella, shredded

  • 1/2 tsp Garlic Powder

  • Salt & Pepper to taste

INSTRUCTIONS:

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. In a medium skillet, heat 2 Tbsp of oil over medium-high heat. Once hot, add your plantains flat side down and cook for 90 seconds. Flip and cook for another 90 seconds until both sides are golden brown and slightly crispy, adding more coconut oil to the pan if necessary. 

  3. Remove pan from heat and allow plantains to cool for a few minutes. Once plantains are cooled, smash into “bagels” using the bottom of a plate. Heat your pan back up to medium-high and cook your smashed “bagels” on each side for 90 more seconds. Remove from heat and transfer to parchment paper lined baking sheet.

  4. Top each “bagel” with Sauce & Cheese, and sprinkle with Garlic Powder, Salt, & Pepper. Transfer to the oven and bake for 8 minutes or until cheese is melted. Remove and Enjoy!

MAKES 6 “BAGELS”
