If you’re missing out on Girl Scout Cookies this year, I’ve got the perfect fix for you! These 4 Ingredient Caramel Delight copycats are Gluten Free, Dairy Free, Refined Sugar Free, and in my opinion, taste better than the real thing! I know recreations are frowned upon while on the Whole30, but all of the ingredients are Whole30 compliant and sometimes you just need a damn cookie! 

INGREDIENTS

  • 1/2 cup Dates, chopped small with kitchen shears

  • 1/2 cup Unsweetened Reduced Fat Shredded Coconut

  • 1/4 cup Eating Evolved “Midnight Coconut” Bar, chopped

  • 1 Tbsp + 1 tsp Coconut Butter

INSTRUCTIONS:

  1. Line a baking pan with a sheet of parchment paper. Add your Chopped Dates & Shredded coconut to a small food processor and processor for 2-3 minutes until everything is VERY well blended! I have you chop the dates first by hand to ensure they get broken down into even finer pieces than if you were to process them whole. I know it seems extra, but I promise it works and makes for an even better cookie!

  2. Using a tablespoon sized scoop, roll your dough into balls, then flatten them out by hand to create a 2 inch round disc. Poke a hole in the middle by using a straw, then transfer cookies to the freezer while you prepare the chocolate.

  3. In a small bowl, combine your Chocolate with your Coconut Butter and microwave in 15 second increments, stirring every time, until just melted.

  4. Dip your cookies into your chocolate mixture and transfer them back to the parchment lined paper next to each other. Drizzle the remaining chocolate across the top in a zig zag motion using either a spoon or a plastic bag with the tip cut off! Refrigerate for 4 hours and Enjoy!
